Comparing the performance of dual-channel vs. equal-channel RAM in games depends on how the system utilizes memory bandwidth. With 16 + 8 dual-channel, you get more channels for data transfer, which can improve throughput under load. Equal-channel at 16 + 16 offers a larger total capacity but may not fully leverage the bandwidth benefits unless the game demands it. If your games only need 12GB, using unequal channels might not significantly impact performance, though dual channels generally provide a slight edge in demanding scenarios.

For dual channel operation you need matching RAM capacity. Hybrid setups might still function, but results are uncertain. Performance benefits from higher RAM aren't guaranteed beyond certain limits.

I understand your worry about leveraging dual channel settings. If 16+8 works just as well as 16+16, then why would we need to spend extra? That’s the issue I’m trying to figure out—will a 16+8 configuration still give us the dual channel benefits?

Only a modest boost of 5-10% is expected. With integrated GPU/APU, the improvement becomes much more noticeable.

It will function in flex mode, using two channels for the initial shared space on each stick (resulting in 8+8 for you), and after that, the rest of the bigger stick will run in single channel when the dual channel limit is reached.
