Checking your system details: AMD Ryzen 5 1600x, MSI B350, gaming motherboard, 2x Gskill Ripjaws V 8GB RAM, 2400Mhz SSD, 1x Samsung 850 EVO 250GB, 1x Seagate Barracuda 1TB HDD, no CPU cooler, Deepcool Assassin GPU, Gigabyte GTX 1660ti 6GB, PSU Cooler Master B500, case Circle CC 820. Will this support running Hackintosh? For MacOS Big Sur, if it doesn't work, are there other OS versions that could fit these specs?

Your device doesn’t work with macOS. You’ll need a GPU made by AMD; current Nvidia models aren’t available.

You’re mostly correct about the GPU, but mistaken about the CPU. macOS works just fine on AMD Ryzen processors—performance is comparable to Intel. Setting up Catalina on my R7 2700 took roughly 30 minutes from the beginning. The issues with AMD CPUs were real before Ryzen, but they’ve largely disappeared now.

It's not feasible with any Nvidia GPU after Pascal (1000 series). Your 1650ti is still capable. Most recent Nvidia drivers only support High Sierra now, so even with a compatible GPU you'd be stuck with an outdated version. You can definitely run macOS on AMD FX and A-series CPUs using OpenCore—similar to what Clover achieved, though it needed a modified kernel.
