I enjoy Corsair's Dominator RAM and recently bought one from MicroCenter. MC doesn't stock a 3600 model, so I checked Corsair's site. You can choose 64 GB of CL18 3600 for $600 or 64 GB of CL16 3600 for $850. The main reason I'm considering a new purchase is that my computer runs as a workstation and for gaming. My current setup uses 32 GB of CL16 3600, which reaches 90-95% usage under normal conditions, so upgrading to 64 GB gives me extra capacity. I'm using: Asus ROG Crosshair VIII Formula MoBo, Zen 3 5900X, 32 GB CL16 3600 RAM, ROG Strix 3090, TT 850W Gold+, and an ElGato 4K60 capture card. Is the higher price for 64 GB worth it, or will the 64 GB CL18 suffice?
CL 16 will improve your results. I can't say exactly if it'll stand out since I'm not you, but there should be a noticeable gap, particularly with Ryzen 5 Gen. If you run at 120 FPS or lower and aren't competitive in games, the difference won't be huge. In work settings using the CPU for rendering, you might see a slight slowdown, but it shouldn't be too bad.
Your project is crucial, so if you're okay with a bit more wait time and reduced frame rate, that's perfectly acceptable.
