I chose the 3600 for several reasons: 1) improved single-thread speed – gaming will run smoother and the system will feel more responsive overall; 2) comparable multithread performance – sacrificing two cores, you gain in single-thread efficiency, making it balanced depending on what you're using; 3) significantly reduced power usage. Your motherboard isn’t ideal, so it may not provide enough power for a 2700x, which could cause the CPU to throttle if the board can't supply sufficient energy.
For gaming and single-threaded work, the 3600 stands out as a superior option—it uses less power, which helps ease pressure on the VRM since the DS3H isn’t very efficient. If your workload can fully utilize the 8 cores and 16 threads of the 2700X, it might be worth considering that model, but for most users I recommend going with the 3600.
