I chose the TUF B550 Plus, but the shop lacks the ATX model. They recommended the MSI B550 Gaming Plus instead. Should I pick MSI? He also mentioned the GB B550 Gaming X. Does MSI offer reliable BIOS support and consistent performance?

It's fine, there's feature that most of us will use, such as XMP, PBO OC, fan setting, BIOS flash. Most BIOS from well known brand is safe, probably the one we need to be wary of is either unknown Chinese brand motherboard or OEM pre-build specific such as Dell, Acer, etc since they general has less commitment on improving BIOS and a lot of limitation once the product is released unless there's a major problem.
