Choose a single M.2 SSD and pick the closest one to the CPU socket. When using two, remember which SATA ports might be turned off if you also have SATA drives installed.

I notice two slim drives and two mounting stations. One is mounted on an 80mm port and the other on an 110mm port. Adjust them as needed—they fit snugly. Which M.2 storage device did you purchase? If it's SATA, it will only fit in the first slot; if NVMe, it can work with either.

They install themselves. Before you wonder, the screws for the standoffs were included with your motherboard.
