If those are the just two choices, then the comment from @191x7 applies. I’d also look at the 7900X—it’s still more affordable than the 7800X3D, yet performs better in manufacturing tasks compared to the 7700X.

I'm not very experienced with this, but I think the 7900x might work better. The 7700 and 7800X3D would be similar. However, if you have a Nvidia GPU that supports NVENC, you could stream instead, shifting the workload away from the CPU.
