Is it a good idea to update my X370 mobo bios + buy R7 3700X/3800X(~270-290€) now and try to sell my R7 1700 for 80€(hard to sell cpu's like this here) or should I wait for R5 5600 for ~260€(X version costs 340€) and get a B550(~150€) motherboard?

You may need an upgraded CPU to handle more demanding tasks efficiently.

Streaming for wealth like others. /s I play mostly MMO games, use emulators and sometimes handle big files. R5 3600 price is around 210-220€

Adding extra cores can improve streaming performance. An Nvida GPU paired with your R7 1700 also works well.
