For this setup, having 16 cores works well. I suggest choosing a X570 model. The B550 lacks complete PCIe 4.0 compatibility, though you might need it later. Some boards only offer 4 SATA ports, unlike the higher-end X570 which supports 6 or 8. With an X570, you can run two GPUs simultaneously at full PCIe 4.0 performance.
