I'm checking out 331.82 drivers now, and after hearing about the recent 337.88 updates, I think it's time to upgrade. What's standard practice for this kind of change? Should I just remove the existing ones, restart the PC, and install fresh versions?

GeForce setup is mostly useless for adjusting game settings. Even with a Titan-Z, it still prompts you to lower things. If you need a fresh driver install, check this forum thread: http://forums.guru3d.com/showthread.php?t=379506
Avoid going too far unless you encounter issues after installing a new driver. With AMD drivers, I just replace the old ones. Occasionally I go to the control panel, uninstall, remove from device manager, or delete the amd folder. If I want to waste time, I'll try driversweeper/fusionX in safe mode and install alongside the rest. Most of the work is simple.
