Hello
My CPU i7 14700kf with mb gigabyte Z790 GAMING X AX BIOS vf11 also undervolted at -0.050 +ddr5 6800 stable + PL1=160 PL2=210 with Intel default settings. Everything is working fine, no crashes or issues. The CPU temperature is normal, but I noticed the voltage in games is a bit high (1.4±1.4-1.8) as you can see from the photos in games TLOU1+2.
I recorded a short video and have a YouTube link.
I also have two HWiNFO64 loggings from my gaming sessions, available here:

Additionally, I checked the files on this site—Log Visualizer. Generate insightful charts from your HWiNFO64 logs to easily visualize and analyze system performance.

Is it normal that the COREVID and VR VOUT (Vcore) are high? I’m not sure if I need to pay more attention to the VR VOUT or not.

PL numbers appear correct. As long as you don’t increase the CPU vcore to 1.5v, everything should work. Your BIOS indicates the vcore is set to AUTO; try adjusting it to 1.4v during gaming and check if the value rises, while keeping your -0.05v undevolt in place.
