I noticed the product shifts into a new shape when activated. It becomes a version we can no longer use, but someone here might explain what’s happening.

This version of Windows 10 restricts key transfer, making it difficult unless you have direct access through the motherboard using Microsoft's activation servers. In such cases, tools like JellyBean key finder can help retrieve the product key.

If it's the retail key, you may ask MS to remove it from your account. OEM keys stay secured because they're meant for initial use on the machine.
