You haven't learned how to switch planes during a mission in FSX. You remember clicking accept changes but not how to open the menu for a different plane. Someone can help clarify that process.
In a mission or during free flight, adjust settings accordingly. For free flight, press alt and click on the aircraft, then choose the aircraft you want to use.
