For 10gbps connectivity you should use cat6a cable (cat7 isn't officially recognized and is probably cat6a) or cat6 for short distances (under 30 meters). Higher standards aren't really necessary. I’m not aware of shops that focus only on networking gear, but Digikey and Newark/Farnell are major distributors carrying Ethernet jacks and keystone connectors. They also carry cable, typically in bulk sizes like 100-meter spools or 305 meters. Should have mentioned searching for bulk cables. Planning for future-proofing my home, soon I'll be moving big file volumes between portable systems.

Cat7 stands out because it follows a different standard than the one used for other cables. Cat 7/7a comes from IEC, while Cat 6 and older norms are from TIA. Both are considered official, just from separate organizations. Cat 6 supports 250 MHz, Cat 6a goes up to 500 MHz, and Cat 7 reaches 600 MHz. Cat 7a extends further to 1000 MHz. In practice, this means Cat 7 and 7a offer higher bandwidth, but for 10GbE the difference is minimal—so Cat 6a remains more affordable.
