My pc runs a Corsair CX 600, and I've heard it's not ideal for overclocking. Could it be risky for my R9 380? My motherboard is an ASUS M5A78L-M LX PLUS.

While you can overclock, I'm not sure you'd be able to push it far. AMD gpu's pull a lot of power, and moreso when they are overclocked. Remember you're also having to power your cpu and other drives.
If you're overclocking you want to make sure your power supply is steady and not prone to fluctuating on the 12v rail, if you've heard that the PSU is bad then you may want to upgrade it if you're looking to get any good gains from overclocking.

Your graphics power rating is 150W, which makes sense.
