I just watched this video and wondered what would happen if you put the battery in the freezer.

Don't take everything at face value on YouTube.
It might seem to come back for a while.
But using it won't keep it alive in the long term.
This isn't a lasting solution.

Also keep in mind the specific battery kind.
NiCD or NiMH are suitable for a brief period.
Lithium is not recommended.

You might want to stay away from videos like that that preach snake oil being the end all be all solution. There's no science behind it and you're introducing a battery into a freezer...? Clearly it's a crap video uploaded to garner some attention(since bad publicity is still publicity and YT thrives on engagements). In fact, the video production looks like it was put together with content cropped/snipped from other people's content.
As state above by my colleague, there's nothing to it. If your laptop's battery is being funky, replace it with a genuine part not the one's found off of Aliexpress with half hearted info slapped across them.

So it will regain its function for a brief period, but what’s the science behind it? I’m just looking to understand.

I don't understand the exact chemistry at play.
The post discusses how freezing affects lithium-ion batteries and mentions that they don't mix well with moisture. It warns that if condensation builds up, the batteries could potentially explode inside a refrigerator.

When a Lithium battery gets wet, it can lead to serious consequences. The video explains the risks involved in such situations.
