I found a decent offer for an 8x16GB RAM package, but I was only interested in 2x16GB units. Is it okay to split the bundle and keep only the two you need, then sell the rest? Would buyers be hesitant about a partial purchase? Would it be wiser to look for a dedicated 2x16GB kit instead?

It should be fine to do what you are thinking of doing. No real technical reason not to do it.

It's okay. They're just pieces of a package, meant to match each other in specs. Be careful if they're ECC server RAM—regular PCs won't work with them. (They should function in a workstation or server, though.) Don't mention they came from an 8 DIMM set when listing them. Selling them as pairs might be better. Does the calculation make sense? Will you receive enough value so your total cost is lower than buying two DIMMs separately?
