I own a keyboard and a mouse each with their own Bluetooth-USB adapter.
Additionally, I have a new Android STB with just one En Ethernet and HDMI connector.
I'm curious if it's feasible to link them via a USB hub using an En Ethernet port, allowing the Bluetooth adapters to function.

If your STB lacks USB ports, it likely can't accommodate a USB keyboard and mouse. The drivers might not have been added to the operating system.
