I believe it should be enough to run FS with the GPU just barely meeting the needs. I have an older 1920x1080 monitor connected to the GPU using an HTML adapter. Would this (the graphics) cause any issues?
I use a standard MS keyboard and a Logitech remote mouse.
Do I need additional hardware to play FS? Or are there elements that could enhance the gaming experience?
If I buy the digital version, can I download and activate the game again after upgrading my PC? Would it be worthwhile saving a few dollars with a digital purchase versus a DVD?

It's understandable to be cautious, especially with a 1080 and only 32GB RAM. The main factor is the graphics settings you're comfortable with. Installing it on the NVMe drive seems like a good choice.
