I'm testing a B450 Aorus Elite with a 7 2700x overclock at 4.3ghz. Voltage regulators reach 80c, but the case fans blow at 70% speed. I'm considering switching to B550 or X570 for better PCIe support and cooling. Also, wondering if it's a good idea to run Zen+ on 500-series boards, especially since I might upgrade my CPU later this year when prices are high.

80°C during stress isn't too bad as long as it's the highest temperature. I'd consider replacing the motherboard at the same time as the CPU upgrade.

2700x offers comparable power to 5800x, so you'll be satisfied with that board.
