Windows is pushing for an update, but I prefer not to. I’d like to restart my PC without installing anything. The options shown in the picture seem limited. Could you help me out? Thanks!

The update is already available. Restarting the system is required to finish the setup (Windows core files can't be replaced while the OS is running)

You don't want to update because you prefer staying the same or need more time to consider your options.

At this point, the only choice is to allow it to update. You can't fix it unless you're willing to restart your PC indefinitely.
