What do you mean by controller flying? The game does not support controller use, but there is a mod on nexus mods http://www.nexusmods.com/masseffect2/mods/62/? . If you dont want to deal with the mod you can change its config files. I forgot how you do this but a quick google and help with your mouse sensitivity. The game has a horribly consolized settings menu
