Since Alder Lake CPUs have different dimensions, do we have to wait for companies to release a new compatible model of AIO or can we use what's available now?

Check if the model supports LGA 1700/1800 by default. Corsair and several others provide adapters for their AIOs.

AMDs Ryzen AM4 processors are already larger than Intel's LGA1151/1200 chips. Intel's upcoming LGA 1700 will match the size of AM4, so existing AIOs should function properly, though you might need an alternative mounting bracket.
