Yes, a simple Intel ITX setup such as the one you described could function, but performance and features would be limited compared to larger systems.

I understand, the main option seems to be using an affordable AMD CPU to upgrade the motherboard's BIOS. The GIGABYTE X570 I AORUS PRO WIFI does allow BIOS flashback, so it could make a difference.
