I plan to purchase this GPU as soon as it's released:

(And kindly avoid suggesting an RX 480, since 8 inches is the maximum size for my setup)

I also have a CX 500 PSU. Is it possible to overclock the 1060 on that motherboard?

don't anticipate much from Pascal and how NVidia achieved their results.
