Adjust the Gigabyte FCLK frequency parameter.
Starting this setup for the first time, I'm using the Gigabyte x570 auros pro wi-fi but haven't located the FCLK frequency option.
Settings -> AMD CBS -> XFR Enhancement
That was it. Turns out there's a specific tab for overclocking settings. Thanks
