I built an HTPC and it won’t boot Windows properly—crashes immediately. It works on Ubuntu but I have two identical HDDs and wanted RAID 0. I installed Ubuntu Server and set up RAID 0, which speeds things up compared to the desktop version. However, the extra features slow down the boot process. Can I install a minimal version like Ubuntu Desktop or disable unnecessary server components to speed it up?

You can turn off any unwanted services by using the command as root. Or simply remove them entirely.

I'm unsure which services are required or unnecessary.
