I’m choosing the first option mainly because of the GPU. Both options have merit. 8gb works for most games, but some newer titles are demanding more, and 8gb may not support background tasks during gameplay. 16gb offers better performance now and in the future.

Using single-channel mode will significantly slow things down, meaning you should also plan for another 8GB stick if you choose this setup. Ultimately, you’ll end up with a total of 16GB, but there’s an extra hidden expense to keep in mind.
