Hey, planning to return to grad school this fall means boosting your Matlab and SolidWorks performance on your home setup. With a target of 64GB RAM, your current Z370 (or upgraded Z390) using dual-channel 4x16GB memory will likely perform better than an X#99 system running in quad channels or an 8x8GB configuration.
I've seen some benchmarks for gaming, and there seems to be almost no difference between duel and quad channel; which is why I believe it hasn't come back in newer processers. Again this is for games, so I don't know how "professional" software will do. I was curious myself when upgrading from X99, and when I saw quad channel was gone from newer chips I was like "why" and then learned it was almost no gain.
It seems a 4x16Gb and a 9700K setup is the best approach. Finding 32Gb non-ECC DIMMs is tough, so ECC might be the main reason to choose this configuration.
