Upgrading to 2x8 or 4x4 doesn't significantly change performance—maybe a slight drop in speed but still within acceptable limits. You can check the processor specifications, which typically list 2 channels. It seems that having two DIMM slots is essentially "multiplexed" on the board, meaning four slots would provide two channels, and eight slots would give four channels.
