Usually I'd prefer more real cores than SMT, but putting all the cores on one CCX gives the 3300X an advantage in tasks like gaming where low latency matters.

For gaming at 3300x, aim for slightly more multithreading if you can. With a 3600MHz RAM speed, the 3500th is ideal.

I see only a handful of creators targeting 3500 or 3300X. Probably just starting out. Gaming looks better at 3300X, especially when factoring in the cost.
