In Australia there are very few options for 5600x ($500), but I can secure an i7 10700k ($485). Is it better to buy Intel now or wait for AMD availability, or for the Intel 11th gen? There might be significant improvements from 10th to 11th gen Intel (though it's tough to assess without benchmarks for the new gen), and going with AMD would also support PCIe Gen4. I really want to use the slots for a GPU as well. The system should handle gaming at 1440p with 165hz.
The 5600X will not perform exceptionally well in the next generation.
It really varies. The 5600X is expected to beat the K in gaming performance, and it should come with a much cheaper motherboard and cooler. It does have more cores and should still be a solid workstation CPU, but for gaming you’d likely choose it over the K.

Neither option fits your needs. The 5600X offers only 6C/12T while the 10700k lacks PCIe-4.0. I’d wait for the 11700k and then upgrade to get 8C/16T with PCIe-4.0. If you must buy now, the 10700k and 5600X are equally strong in gaming. It’s unclear which extra cores on the 5600X would matter more compared to PCIe-4.0 support.
It depends on whether the 11.7 GHz chip will actually support hyperthreading, and it’s possible it won’t. The OP might need more cores than it provides, which could be unnecessary.
